A hard, cream colored, aged cheese made from cultured pasteurized USDA grade A milk, salt and enzymes. Queso Cotija Cheese is aged under controlled environment for flavor enhancement. It is dry and granular textured with a salty and sharp flavor much like a Parmesan Cheese. Queso Cotija is characterized by 35-42% moisture, 3.5-5% Salt, 5-5.5 pH, and 25-35% milk fat.
